Good ol' Pico. So simple. So yummy. Tomatoes pre-game in your fridge with onion, cilantro, jalapeños and lime juice before they party in your mouth. Good times.
This recipe was a happy accident. It was born from a need to eat a bunch of kale before it went bad. I bought it with the best intentions. Put it in the fridge. Forgot about it. Oops. Anyway, I hurriedly threw a bunch of randomish stuff in a pan with my neglected kale and this happened. Now I eat it pretty regularly. :)
Simple, easy, dirt cheap and delicious. Don't pay $4-$7 dollars a bag if you don't want to, these are better.
These baguette croutons, AKA crostini are amazing with soups, salads, dips and toppings of all kinds. They're so easy to make fresh, it's hard to justify dropping coin on the overpriced and often weeks old packaged croutons sold at the supermarket.
