Pico De Gallo


Good ol’ Pico. So simple. So yummy.

Tomatoes pre-game in your fridge with onion, cilantro, jalapeños and lime juice before they party in your mouth. Good times.


2 ripe Roma tomatoes, diced

1 jalapeño pepper, chopped (seeded if you like a milder pico)

1/4 cup finely chopped white or yellow onion

1 clove of garlic, minced

1/2 cup of cilantro leaves, chopped

1 teaspoon of salt

2 tablespoons of fresh squeezed lime juice (just say no to imitation)


  • Throw everything into a bowl and mix it up.
  • Cover and allow your baby pico to mature in the fridge at least 30 minutes.

Boom. You just made Pico de Gallo. Easy huh?

Put it on chips, tacos, tostadas, quesadillas, burgers, hotdogs, fish, chicken, your taxes, your rude neighbor, the potholes in your street… Pico De Gallo makes everything better.

Shout-out to my son Diego for introducing me to hot dogs with pico. I know it’s a thing but I never would have tried it if he hadn’t offered me that first magical bite. Cheers, bud. Love you.
